The family is in the 4th Generation in the commitment to maintain high quality through the selection of Arabica coffee and Robusta among the finest in the world in order to form a high quality product.
The variety of Arabica as coffee Santos and Colombia grows up to 800/1500 meters above sea level, has an elongated green / blue grain. In the cup it is aromatic, sweet and delicate, sometimes fruity. It is characterized by a low content of between 0.8 and 1.5% of caffeine.
The Robusta variety like Indian coffee and Santo Domingo grows at low altitudes between 200 and 600 meters above sea level, the yellow / brown grain is more rounded. In the cup it is characterized by a stronger taste, more full-bodied and has a caffeine content between 1.7 and 3.5%.
In the preparation of the espresso the difference lies in the grinding; the grains are harder and require finer grinding. Robusta coffee bears less than high temperatures (even for the lowest oil content) its cream is thicker and the espresso is more full-bodied, but also delicate.
